often a delight many look forward to each spring. Forest Haven Inn and
Balfron Hillside Chalets has developed a systems of Hiking Trails
on our property..

Fiddlehead Fiesta....
May,
the best time for picking Fiddleheads or Ostrich Fern (Matteuccia
Struthiopteris) along the banks of rivers and streams in our area here
at Forest Haven Inn and Balfron Hillside Chalets.
Take a walk along the Waugh River, look for tight coiled plants an inch or two above the ground. Carefully remove the brown scales that surround the plant, wash with copious quantities of water, the river works great, along with a fishing net. While fiddlehead picking is an enjoyable outing, you can purchase them at Farmers Markets.
Boil or steam the Fiddleheads in a pot of lightly salted boiling water for 10 minutes, or steam for 20 minutes. Serve immediately with butter, vinegar. The timelier they are consumed the more flavor they will have. Fiddleheads a good source of vitamins A and C, niacin, magnesium, iron, potassium, zinc and phosphorous.

Spring Peeper....
In spring many a
naturalist's fancy turns to frogs. Eight kinds of
frogs live in Nova Scotia. The sight and sound of the Spring Peeper is
part of most peoples childhood experience. Join us here at Forest Haven
Inn, in our annual hunt for the Peeper! Our region has numerous ponds,
wetlands and rivers, great for spotting these elusive guys!
We recently had some visitors up from Halifax and one of their first questions was "are the peepers out yet", apparently they are seldom heard in Halifax!
